Yeast has two roles in bread, one main function and a secondary function. The primary function of yeast in bread is as a leavening agent. This means it gives rise to the bread and creates a more open and airy texture. The secondary function of yeast in bread is to add strength to the dough.
Instructions. In a large bowl, combine flour, baking soda, baking powder, sugar, salt and garlic powder. Add milk and 1 tablespoon of oil to a small saucepan. Warm over medium heat for 3-5 minutes. Stir into flour mixture until small lumps form. Turn onto a floured surface and knead dough until soft and smooth (add more flour as needed).
Fold the dough in half toward you and press down. Then use the heels of your hands again to push down and outward, lengthening and stretching the strands of gluten and dough fibers. Turn the dough about 45 degrees and knead again with the heels of your hands. If it is getting sticky, add a little more flour.
Bread machine yeast can be used on all machines during the entire cycle of a bread machine. Use the product within 6 months of opening but no later than the date on the cap.
